How To Pronounce Quinoa

Quinoa: \ken-no-wa\ 

Benefits of Quinoa: naturally gluten free, contains iron, calcium, fiber, potassium, vitamin E... and probably many more good things. Plus it doesn't taste too bad.

Here's my favorite way to enjoy quinoa and all of its benefits.

Ingredients:

1/2 red onion
2-3 cloves of garlic (the more the merrier)
1/2 tsp salt
1 tbsp cumin
Small sprinkle of cayenne 
Dash of Lawry's seasoning salt
2 1/2 cups quinoa
4 cups of water 
1 tbsp coconut oil


Step 1: In a large saucepan heat the coconut oil on medium heat.

Step 2: Dice the red onion and add to pan, along with the garlic. 


Step 3: While the onion and garlic are cooking rinse the quinoa and add to onion mixture. 


Step 4: Pour in water, sea salt, Lawry's, cumin & cayenne. Mix well. 

Step 5: Cover and cook on low 25-30 minutes.


Step 6: Add toppings. I usually add avocado, shrimp and feta.
