Don't Put All of Your Eggs in One Basket

Inspired by my favorite meal at Egg Restaurant in Williamsburg, this is  the next best thing to a bodega egg and cheese breakfast sandwich.

Ingredients:

2 Slices of Bread
2 Eggs
Parmesan Cheese



Step 1: Cut holes in bread slices (I used the top of a mason jar as a cookie cutter)

Step 2: Butter pan and place on medium heat 

Step 3: Crack egg in center of bread slices

Step 4: Sprinkle cheese on eggs

Step 4: Cook until egg is solid



Optional Step 5: Serve with simple hollandaise sauce

Ingredients: 

4 Egg Yolks
1/2 Cup Butter
Salt


Step 1: Melt1/2 cup butter in separate pan

Step 2: Quickly whisk 4 egg yolks and place on low heat

Step 3: Add 1/4 cup melted butter to the egg yolks, whisk, then whisk in the other half of the melted butter and sprinkle salt over the mixture
