Simple Breakfast: Ch-Ch-Ch-Chia Seed Pudding

As a college student, I want to sleep in as long as possible. I have found that one way to make this happen is to have simple premade breakfasts ready to go in the morning. Not to mention, they need to be healthy so that you have enough energy to get through a day of class, work, endless reading, and studying.

For this healthy recipe, you combine all of the ingredients the night before, stick it in the fridge, and it will be ready when you wake up. Amazing.

Chia seeds may not be the most flavorful food, but they have many benefits for your health. Here are my top seven reasons for you to incorporate chia seeds into your diet:

  1. They're loaded with antioxidants
  2. High fiber, so hello smooth digestion
  3. Protein, protein, protein
  4. Contain Omega-3, yay for healthy fat
  5. Great for bone health, thanks to calcium, phosphorus, magnesium, and protein
  6. Basically tasteless
  7. When added to water they turn into a gel and can be used to replace ingredients, such as eggs



Ingredients:
-2 Heaping Tbsp of Chia Seeds
-1 C Almond Milk
-2 Tsp Coconut Sugar


Step 1: Combine all ingredients into a container and cover with a lid



Step 2: Place in fridge for at least 5 hours


Step 3: Top with your favorite fruit

Step 4: Enjoy!

Simple Açai Smoothie Bowl




When I wake up in the morning, I want breakfast ASAP; so simple breakfast recipes help me not to get hangry or be late for school/work. During the summer, this Açaí bowl is what I enjoy almost every morning. It doesn’t require any cooking. All you need is a blender.
            I once took a photo of an açaí bowl that I made and posted it on Instagram. After which, countless people came up to me and asked if I could make them one/how to make their own. Little did they know, it’s incredibly simple. Here’s my not so secret açaí bowl recipe:

Ingredients:
2 Small frozen bananas
½ Cup berries of choice (you can you more or less, but this is approx. how much I usually         add)
1 Packet frozen Açaí packet (can be found in most grocery stores)
1 Cup milk of choice/coconut water (I prefer almond milk)
1 Cup ice (optional for thicker consistency)


Step 1: Add frozen bananas, Açaí packet, berries, ice, and liquid of choice into blender
Step 2: blend until smooth


Step 3: pour into bowl and add toppings of choice

I prefer almond butter, cacao nibs, almonds, bananas, and berries.
Less for the reason of taste and more for the health benefits, I add chia and flax seeds.
